- Computing
This course enables students to learn how to confidently
use a computer in a business environment. Students
study Microsoft Word and Excel. Among other skills,
they learn to write reports, create templates and
spreadsheets for a host of applications including
budgets, cash flows and profit and loss statements.
- NZSFW Certificate
in Wine
Here students learn about the wine varietals and how
to evaluate them. Wines are tasted blind and students
learn to write short descriptions of each wine. Students
develop a sound general knowledge about Old and New
World wines and wine making processes. Wine and Food
matching is also considered.
- Restaurant and Wine
Service : the ceremony of eating
Students learn the practical side of running a restaurant
or cafe with work experience at Hay's. During this
time they become a barista, waiter and host. They
deal with real customers in a real situation. Students
study towards their General Manager¡¯s Certificate
for the Sale of Liquor Act and also study Hygiene
and complete the Red Cross First Aid Certificate.

Students learn about business compliance (legal, accounting)
and how to establish a hospitality business. They
learn how to cost menus, analyse business costs and
use ratios to understand them. Students study the
principles of economics and how they apply to business
as well as marketing concepts and branding strategies
to ensure business success. They analyse organisations,
learn how to employ staff, write job descriptions
and build teams. For the final project students conduct
a feasibility study of a business that they may wish
to set up in the future. This helps consolidate the
knowledge gained throughout the course.

New Zealand School of Food and Wine offers an advanced
wine programme for people wishing to extend their
knowledge of wines, spirits, beer and liqueurs and
develop a better understanding of the New Zealand
wine industry.
A sommelier has extensive knowledge of wine and other
alcoholic beverages including spirits and liqueurs.
Sommeliers are able to advise customers on the nature
of a wine and whether or not it will complement a
meal. They can also compile a wine list and ensure
that the wine is correctly served and stored.

Each week students learn about the regional
wines from France, Spain, Italy and Germany as well
as from the New World ? North and South America, Australia,
New Zealand and South Africa. Extensive tutored tastings
from these wine regions allows students to compare
the Old World wine styles with those produced in the
New World. Students are able to build their knowledge
of the diversity of wine styles by comparing
and contrasting the wines in this way. Students also
study the production of beer, whisky, brandy and other
spirits.
Restaurant and wine service currently
practiced in quality restaurants as well as the duties
of a sommelier in terms of sales, winelist management
and stock control. Students will complete 20 hours
work experience at Hay¡¯s Restaurant, which holds a
Wine Spectator Award of Excellence. Students also
complete the mandatory Sale of Liquor qualification
to gain a general manager¡¯s certificate to oversee
sale of alcoholic beverages in New Zealand.
NZSFW Certificate of Wine evaluates
New Zealand wines in more detail. This enables students
to become more familiar with the latest releases of
local wines as well as the history and focus of the
dynamic New Zealand wine industry.
A computing course has also been
devised to enable students to use excel and word as
tools to cost wines, design wine lists and manage
inventory.
During the course, students also
visit a brewery as well as a selection of local wineries
to study viticulture and wine-making practices from
well-respected local wine makers.
